<p style="text-align: center;"><strong>Wine Selection: Honig&#8217;s Sauvignon Blanc</strong></p>
<p style="text-align: left;">Yes, that&#8217;s right!  The Napa Valley&#8217;s Honig was the winner of the first Battle of the Valleys!  It was a <em>close</em> competition.  The ending score was 57% Honig vs 43% Kunde.  Can&#8217;t get much closer than that!</p>

<p style="text-align: left;">Both being very different styles: the Kunde is much bigger, rounder, more tropical and the Honig being much more crisp, citrus, dry.  All in all, both are FANTASTIC and perfect for Spring/Summer!</p>

<p>GREEN, Sustainable, Organic&#8230;the list goes on and on. What is going on? It seems as though wineries are jumping on board with the trend of being more environmentally responsible, but does it really change our spending habits? What if there was a place where you, the consumer, could get information about wine producers that are doing their part to be more responsible? Would it matter? Would you go for a wine that was maybe $2 more expensive because in a round about way it would help the environment?</p>
<p>Let me know! I want feedback. Parducci was the first winery to claim &#8220;Carbon Neutral,&#8221; did anyone know this? Does anyone care?</p>

<div><span style="font-size: 10pt; color: #000000; font-family: Verdana;"><span style="font-size: small;"><span style="color: #000000; font-family: Arial;">I know who Thomas Keller is from the renowned &#8220;French Laundry,&#8221; but I didn&#8217;t really <em><span style="font-family: Arial;">get</span></em> it until I ate at one of his establishments, <a title="Bouchon" href="http://http://www.bouchonbistro.com/bouchon.htm">Bouchon</a> in Yountville.  This was the most amazing meal!  There was the oyster starter, with 3 different types (please don&#8217;t ask me what they were&#8230;).  The sommelier paired this course with a brut sparkling wine&#8230;FABULOUS!  For the next course, Katie and I split two salads: one with a poached egg and bacon on in, the other was lobster with assorted beats&#8230;this was paired with a dry Riesling&#8230;.PHENOMENAL.  Then on to the &#8220;bell of the ball&#8221;&#8230;<em><span style="font-family: Arial;">Foie</span></em> Gras with a Sauterne.  I&#8217;m not sure the sommelier told us what sauternes, so I picked the 2005 Coutet.  It&#8217;s incredibly priced and according to Wine Spectator:</span></span></span></div>

<p><span style="font-size: small;"><span style="color: #000000; font-family: Verdana;">This classic pairing of the intensely rich </span><em><span style="color: #000000; font-family: Arial;">Foie</span></em><span style="color: #000000; font-family: Arial;"> Gras and the Sauterne danced on my tongue for a remarkable experience that was worth writing about.  The meal went on to Steak Frites paired with a Cabernet Franc, then to the cheese plate for desert&#8230;.it was an experience to remember!</span></span></p>
